Sausage and Sweet Potato Hash

4 sweet potatoes, peeled and chopped
2-4 apples, peeled, cored and chopped
1-2 onions, diced
1 pound Wilcox Heritage Farm nitrate-free sausage
1 tsp dried rosemary
1 tsp dried parsley
3/4 teaspoon garlic salt, or dried minced garlic
1/2 tsp paprika
1/4 tsp ground mustard
Olive Oil

Preheat the oven to 400 degrees. Place prepared sweet potatoes in a baking dish. Drizzle with olive oil and sprinkle with spices. Toss to coat. Roast the sweet potatoes in the oven until they are soft but not mushy.
While that is cooking, brown sausage and onion in a pan. When the sausage is just about done, add in the apples, and saute 3-4 minutes more.
Pour this mixture in with the sweet potato mixture (when potatoes are done) and put back in the oven for an additional 7-10 minutes or until sweet potatoes are starting to brown.
