Fresh Pumpkin Pie

The same day I processed pumpkin, my eldest came into the kitchen, seen what I was doing, and said "Mom, can we have pumpkin pie today?"  I said, "Sure, why not? This will be a really fresh pumpkin pie!"  Here is the recipe I use for pumpkin pie made with fresh pumpkin.

Homemade Fresh Pumpkin Pie
2 c. mashed, cooked pumpkin
1.5 cups of milk
2 eggs, beaten
3/4 c. packed brown sugar
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. salt

1. Preheat oven to 400 degrees.
2. Prepare pie crust and place in 9-10" pie dish.
3. In large bowl, combine pie ingredients.  Blend well, and pour into prepared crust.  Bake 40 minutes or until a knife inserted one inch from the edge comes out clean.  Serve with whipped cream.
